Top 3 Corn Recipes

Corn season is right around the corner! July 10 our corn stands will be open and you can come grab the best corn in Utah at any of our locations around the state. But once you have the corn, what can you make with it? Below are 3 of our favorite recipes that you can try this season.

Summer Corn Salad:


  • 1  can black beans, drained and rinsed
  • 2 avocados cut unto small 1/2 inch pieces 
  • cups Harward Farms corn 
  • cup cherry tomatoes, diced
  • 1 small red onion , diced
  • 3-4 limes, juiced
  • tablespoons avocado or olive oil
  • 1 teaspoons maple syrup 
  • tablespoons fresh cilantro , finely chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon chili powder
  • Salt and Pepper to taste


1.Place all the veggies in a large bowl  and toss to combine.

2. In a small bowl, mix all of the dressing ingredients and whisk for 1 minute.

 3. Pour dressing over veggies and toss to combine and enjoy!


Corn & Zucchini Fritters


  • 4 cups Harward Farms zucchini, shredded
  • 2 Cups Harward Farms corn, kerneled
  • 5 green onions, chopped
  • 4 garlic cloves, minced
  • 1 1/2 cup almond flour
  • 3 teaspoons cumin
  • 2 teaspoon oregano
  • 2 teaspoon thyme
  • Salt and pepper to taste

1. Mix zucchini, corn, green onions,  flour, garlic, cumin, oregano, thyme, salt & pepper together in a bowl.. Stir together until well combined.

2. Allow to sit for 10 minutes.

3. Cook approximately 1/4 cup at a time over medium heat for 4-5 minutes per side or until golden brown.


Grilled Corn


  • 1/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1/2 cup crumbled cotija cheese
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/4 cup cilantro, chopped

1. Cook corn over grill for approximately 6-8 minutes or until well cooked on all sides.

2. Mix mayonnaise, sour cream, cheese, chili powder, garlic and cilantro in a large bowl.

3. Transfer corn to bowl with cheese mixture and use a large spoon to evenly coat the corn on all sides. Sprinkle with extra cheese and chili powder. Serve immediately.
